Una tradizione focosa

Il metodo di gran lunga più utilizzato fino ad oggi per la tostatura del caffè, processo indispensabile per trasformare le astringenti bacche verdi nei profumati chicchi destinati a creare inebrianti infusi, consiste nell’introdurre le bacche in tamburi rotanti riscaldati con fiamme alimentate da gas.

Il metodo è consolidato e dipende in misura notevole dall’abilità dell’operatore, che regola accuratamente miscela e flusso del combustibile per ottenere una temperatura costante e adeguata al grado di tostatura desiderato. Naturalmente questo processo risente di tutti i limiti dal punto di vista della sicurezza posti dalla presenza di gas infiammabili, che in certi ambienti è sottoposta a restrizioni o espressamente vietata.

L’importanza della costanza

Il principale vantaggio percepito da chi utilizza il riscaldamento a gas è la rapidità con la quale il caffè raggiunge la temperatura desiderata e la possibilità di mantenerla costante in modo da garantire un aroma sempre identico: il consumatore, una volta identificato il suo caffè preferito, non desidera infatti variazioni inaspettate. 

L’esigenza di un processo sempre ripetibile e uguale a sé stesso tende a creare una certa diffidenza verso le innovazioni, percepite come foriere di possibili deviazioni dagli standard di perfezione così faticosamente raggiunti.

La buona notizia per i fieri custodi della tradizione è che gli stessi risultati di ripetibilità e affidabilità sono raggiungibili con il riscaldamento ad aria, come dimostra una recente sperimentazione condotta da Probat, multinazionale tedesca leader mondiale nella produzione di macchinari e sistemi per l’industria alimentare, specializzata in particolare nel settore del caffè.

L’aria calda alla prova dell’esperienza

Per oltre 150 anni, attraversando quattro generazioni, Probat ha fornito macchinari per torrefazione alle principali aziende del settore in tutto il mondo. Una volta soddisfatto questo requisito essenziale, è stato possibile mettere a confronto le tecnologie da altri punti di vista.

Tutti i vantaggi dei riscaldatori ad aria

Probat ha avuto modo di verificare che l’aria calda porta dei benefici notevoli rispetto ai riscaldatori a gas, a parità di ripetibilità e costanza del processo, prerequisiti imprescindibili nel segmento della torrefazione.

Il primo e più evidente vantaggio riguarda la sicurezza: l’assenza di fiamme libere rende l’utilizzo dei riscaldatori ad aria più tranquillizzanti in tutte le circostanze, ma in alcune situazioni sono l’unica alternativa ammissibile. È il caso, ad esempio, delle piccole torrefazioni aperte al pubblico, dove la presenza di gas infiammabili non è ammessa dalle norme di sicurezza vigenti; lo stesso vale per altri contesti, come le navi da crociera e molti centri commerciali.

I riscaldatori elettrici, oltre a poter interrompere con grande rapidità il processo in caso di emergenza, permettono di fornire aggiustamenti molto precisi della temperatura anche intervenendo da remoto, rimuovendo i residui di combustione durante il processo e permettendo una regolazione molto più precisa dell’aroma.

Il processo di tostatura ad aria calda, rispetto all’uso dei riscaldatori a gas, genera inoltre una quantità molto inferiore di anidride carbonica, idrocarburi e ossido di zolfo, sostanze che possono alterare le caratteristiche organolettiche dei chicchi tostati, oltre a non essere saluberrime. La qualità del prodotto migliora, come la soddisfazione dei consumatori.

Un altro punto di forza dei riscaldatori elettrici è la possibilità di essere integrati in impianti esistenti, anche se erano stati progettati in origine per il riscaldamento a gas; con poca spesa si elimina la necessità di installare o aggiornare i dispositivi di sicurezza richiesti nel caso dei riscaldatori a gas e si riducono i tempi di inattività per la relativa manutenzione.

Probat e Leister insieme su più fronti

Alla ricerca di un sistema di riscaldamento che non presentasse gli inconvenienti del gas, Probat si è rivolta a Leister, sapendo che avrebbe trovato un interlocutore affidabile, con oltre 70 anni di esperienza nel progettare e realizzare soluzioni efficienti per l’industria.

Probat ha deciso di introdurre il riscaldamento ad aria nel suo modello P05, destinato alle torrefazioni di piccole dimensioni. Con una capacità di 5 kg, questo modello era stato concepito con un riscaldatore a gas da 14 kW; è stato possibile sostituirlo con un sistema di riscaldamento ad aria da 17 kW utilizzando il riscaldatore LE 10000 DF-C.

Il riscaldatore d’aria elettrico LE 10000 DF-C è uno dei prodotti Leister studiati per l’integrazione nelle cosiddette “camere bianche”, in cui sono previste condizioni igienici rispondenti a stringenti requisiti, come nei settori medico, farmaceutico e naturalmente alimentare. 

LE 10000 DF-C è stato sviluppato sulla base dei più recenti standard per la produzione in purezza, definiti dall’European Hygienic Engineering & Design Group (EHEDG). 

Realizzato interamente con materiali atossici, LE 10000 DF-C riduce al minimo le emissioni di particelle grazie alla scelta dei materiali utilizzati ed al suo design.

L’installazione di LE 10000 DF-C è semplice e veloce; oltre al riscaldatore è stato possibile inserire sensori per il controllo automatico della temperatura. Precisione e flessibilità sono del tutto equiparabili rispetto al riscaldatore a gas, così come la qualità del prodotto finito; l’efficienza del processo risulta superiore, con benefici per consumi e ambiente.

Il modello P05 è commercialmente il più rilevante, ma non l’unico, fra i macchinari Probat che integrano la tecnologia Leister. Anche il minuscolo macchinario da laboratorio Probat, con una capacità di appena 200 grammi, tosta il caffè utilizzando il calore proveniente dal collaudato MISTRAL 6 SYSTEM.

Con un peso di appena 1,5 kg, il riscaldatore autonomo MISTRAL 6 SYSTEM ha necessità di manutenzione ridottissime grazie al motore brushless. 

Semplice da montare, MISTRAL 6 SYSTEM è dotato di una funzione di raffreddamento automatico. L’interfaccia del sistema permette di controllare dall’esterno sia il riscaldamento che l’aria in uscita: il pratico display fornisce informazioni sullo stato e abilita la programmazione diretta.

Torrefazione in tutte le taglie

La gamma Leister di riscaldatori ad aria calda per la tostatura del caffè comprende soluzioni per macchinari di tutte le dimensioni: dai riscaldatori autonomi con soffiante incorporato per i sistemi più compatti, a combinazioni di riscaldatore e soffiante per le taglie più forti.

Per i piccoli apparecchi da laboratorio con capacità inferiore ai 500 grammi, l’ideale come abbiamo visto è MISTRAL; oltre alla già citata versione 6 SYSTEM, MISTRAL è disponibile anche nella versione PREMIUM 2, 4 e 6, dove la temperatura e portata dell’aria vengono gestite in maniera molto semplice tramite potenziometro.

Per tostare fino a un chilo di chicchi, possono essere impiegati riscaldatori come HOTWIND o VULCAN. HOTWIND, il fratello maggiore di Mistral, si differenzia per una capacità più che doppia di generare aria calda (portata max.900 l/min); la potenza dell’elemento riscaldante che parte dai 2300 W del modello più semplice e raggiunge i 5400 W nel modello più performante. Anche HOTWIND è disponibile nelle due versioni PREMIUM e SYSTEM.

VULCAN fornisce fino a 11 KW di potenza riscaldante in un unico dispositivo compatto, robusto e facile da integrare nei processi industriali. 

Le piccole e medie torrefazioni con l’esigenza di tostare lotti da 1 a 12 chili possono utilizzare un riscaldatore – dalla gamma LHS, disponibile in un range di potenza da 550 W fino a 40 KW, fino al modello LE 1000 DF-C utilizzato come abbiamo visto per il Probat P05 – abbinato a una soffiante come Mono, Robust o Airpack.

Le dimensioni ridotte della soffiante MONO 6 SYSTEM non devono trarre in inganno: pesa solo 1 kg ma ha una portata d’aria fino a 600 litri al minuto, regolabile mediante unità di controllo e-Drive o interfaccia esterna. Il motore brushless azzera le necessità di manutenzione e permette il funzionamento in continuo. 

Robust è una soffiante compatta: con soli 8 kg di peso ha una portata d’aria di 1200 litri al minuto. Ha un sistema di insonorizzazione che la rende molto silenziosa, è robusta e può essere utilizzata in qualsiasi posizione, anche in continuo e in condizioni ambientali difficili.

Per gli impianti di maggiori dimensioni è sicuramente indicata Airpack, può convogliare grandi quantità d’aria a elevata pressione. Potente (2200W) e performante (3900 litri al minuto), può alimentare anche più di un riscaldatore alla volta. Anche per Airpack sono disponibili vari accessori: tubi, adattatori e ugelli.

A fiery tradition

By far the most widely used method to date for roasting coffee, an indispensable process to turn the astringent green berries into the fragrant beans used to create exquisite infusions, is to introduce the berries into rotating drums heated with gas-fuelled flames. 

The method is well-established and depends heavily on the skill of the operator, who carefully adjusts the mixture and flow of fuel to achieve a constant temperature appropriate to the desired degree of roasting. Of course, this process suffers from all the safety limitations posed by the presence of flammable gases, which is restricted or expressly forbidden in certain environments.

The importance of being reliable

The main advantage perceived by those who use gas heating is the speed with which the coffee reaches the desired temperature and the possibility of keeping it constant so as to guarantee an always identical aroma: consumers, once they have identified their favourite coffee, do not want unexpected variations. 

The need for a process that is always repeatable and always the same tends to create a certain diffidence towards innovations, perceived as harbingers of possible deviations from the standards of perfection so painstakingly achieved.

The good news for the proud custodians of tradition is that the same results of repeatability and reliability are achievable with air heating, as demonstrated by a recent experiment conducted by Probat, a German multinational world leader in the production of machinery and systems for the food industry, specialising in particular in the coffee sector.

Hot air put to the test by experience

For more than 150 years, spanning four generations, Probat has been supplying roasting machinery to major coffee companies around the world. Probat’s machines roast coffee to perfection, whatever their size: they are segmented according to capacity, from large industrial machines to roasters for small roasters that handle 5 kg of coffee at a time, to tiny laboratory solutions with a capacity of just 200 g, where the beans are tested before purchase, new roasting methods are tried out and innovative blends are created under the supervision of experts in the segment.

Probat compared the two heat sources, gas-fuelled flames and hot air, and verified that both were able to provide a very good match to the ideal curve of temperature variation over time, established by the roaster, to precisely achieve the type of flavour desired by the consumer. Once this essential requirement had been met, it was possible to compare the technologies from other standpoints.

All the advantages of air heaters

Probat has been able to verify that hot air brings considerable benefits compared to gas heaters, with the same process repeatability and consistency, prerequisites that are essential in the roasting segment.

The first and most obvious advantage concerns safety: the absence of open flames makes the use of air heaters more reassuring in all circumstances, but in some situations they are the only permissible alternative. This is the case, for example, in small coffee shops open to the public, where the presence of flammable gases is not permitted by current safety regulations; the same applies to other contexts, such as cruise ships and many shopping centres.

In addition to being able to interrupt the process very quickly in the event of an emergency, electric heaters can also provide very precise temperature adjustments by intervening remotely, removing combustion residues during the process and allowing a much more precise adjustment of the aroma.

The hot air roasting process, compared to the use of gas heaters, also generates far less carbon dioxide, hydrocarbons and sulphur oxide, substances which can alter the organoleptic characteristics of roasted beans, as well as being unhealthy. Product quality improves, as does consumer satisfaction.

Another strength of electric heaters is that they can be integrated into existing systems, even if they were originally designed for gas heating; with little expense, the need to install or upgrade the safety devices required in the case of gas heaters is eliminated and downtime for maintenance is reduced.

Probat and Leister together on several fronts

Looking for a heating system without the drawbacks of gas, Probat turned to Leister, knowing that it would find a reliable partner with over 70 years of experience in designing and implementing efficient solutions for industry.

Probat decided to introduce air heating in its P05 model, intended for smaller roasting plants. With a capacity of 5 kg, this model was designed with a 14 kW gas heater; it could be replaced with a 17 kW air heating system using the LE 10000 DF-C heater.

The LE 10000 DF-C electric air heater is one of Leister’s products designed for integration into so-called ‘clean rooms’, where hygienic conditions meet stringent requirements, such as in the medical, pharmaceutical and, of course, food sectors. 

The LE 10000 DF-C was developed on the basis of the latest standards for purity production, defined by the European Hygienic Engineering & Design Group (EHEDG). 

Made entirely of non-toxic materials, the LE 10000 DF-C minimises particle emissions thanks to the choice of materials used and its design.

Installation of the LE 10000 DF-C is quick and easy; in addition to the heater, sensors for automatic temperature control can be incorporated. Accuracy and flexibility are fully comparable to gas-fired heaters, just like the quality of the finished product; process efficiency is superior, with benefits for consumption and the environment.

The P05 model is commercially the most important, but not the only, of the Probat machines incorporating Leister technology. Even the tiny Probat laboratory machine, with a capacity of just 200 grams, roasts coffee using heat from the proven MISTRAL 6 SYSTEM.

Weighing just 1.5 kg, the self-contained MISTRAL 6 SYSTEM heater has very low maintenance requirements thanks to its brushless motor. 

Easy to install, the MISTRAL 6 SYSTEM is equipped with an automatic cooling function. The system interface allows both heating and air output to be controlled from the outside: the practical display provides status information and enables direct programming.

Coffee roasting in all sizes

Leister’s range of hot-air heaters for roasting coffee includes solutions for machines of all sizes: from stand-alone heaters with built-in blower for the more compact systems, to combinations of heater and blower for the larger sizes.

For small laboratory appliances with a capacity of less than 500 grams, the ideal as we have seen is MISTRAL; in addition to the already mentioned 6 SYSTEM version, MISTRAL is also available in the PREMIUM 2, 4 and 6 versions, where the temperature and air flow rate are controlled very simply via a potentiometer.

For roasting up to one kilo of beans, heaters such as HOTWIND or VULCAN can be used. HOTWIND, Mistral’s big brother, differs in that it has more than double the capacity to generate hot air (max. flow rate of 900 l/min); the power of the heating element starts at 2300 W in the simplest model and reaches 5400 W in the highest performing model. HOTWIND is also available in two versions, PREMIUM and SYSTEM.

VULCAN provides up to 11 KW of heating power in one compact, robust and easy-to-integrate device for industrial processes. 

Small and medium-sized roasters needing to roast batches from 1 to 12 kilos can use a heater – from the LHS range, available in a power range from 550 W up to 40 KW, up to the LE 1000 DF-C model used as we have seen for the Probat P05 – combined with a blower such as Mono, Robust or Airpack.

The small size of the MONO 6 SYSTEM blower should not be misleading: it weighs only 1 kg but has an air flow rate of up to 600 litres per minute, which can be adjusted via the e-Drive control unit or external interface. The brushless motor eliminates maintenance requirements and allows continuous operation. 

Robust is a compact blower: weighing only 8 kg, it has an air flow of 1200 litres per minute. It has a soundproofing system that makes it very quiet, it is robust and can be used in any position, even continuously and in difficult environmental conditions.

For larger installations, Airpack is definitely recommended, as it can convey large quantities of air at high pressure. Powerful (2200W) and high-performance (3900 litres per minute), it can also feed more than one heater at a time. Various accessories are also available for Airpack: hoses, adapters and nozzles.
